Deciding to marry the man of your dreams wasn’t all that hard of a decision, was it? Deciding on a cake flavor for your big day…not so easy. Flavor after flavor after flavor seems so enticing for many different reasons. Add in all the different cake, icing and filling combinations, and the possibilities could go on forever. While many things should be considered when making your final decision, such as the bride and groom’s preferences or any known allergies, brides and grooms should carefully consider flavors that will complement the weather and season of their wedding. So, with Spring just around the corner, I spoke with Bill Kloos of Memphis-based bakery All American Sweets to find out some spectacular spring flavors to give your cake a punch. Read on for Bill’s fabulous ideas!
1. Berry Delicious
Nothing encompasses Spring more than fresh berries. Whether you want berry icing, cake, filling or all three, Bill says the combinations are Springtime’s most popular choices. Plus, with berries being in-season for those Spring nuptials, you will get a splash of fresh taste and bright color.
“Spring is huge for berries. Those are big berry months. Our strawberry cake is our number one selling cake, whether for weddings, birthday cakes or wholesale. It can be served with our strawberry buttercream and paired with our strawberry filling. Or, if you are thinking of vanilla, you can take our wedding cake and put in a strawberry or raspberry filling into that with any of the flavored buttercreams.”
2. Tropical Paradise
For a Spring wedding, you want your cake to remind guests of the smells and tastes of the coming warm weather. One way to do this, as Bill explains, is to choose fresh and tropical flavor combos.
“We often do a coconut cake with a lemon creme. Lemons give that citrus taste, which can often be thought of for summer, but it still gives you that freshness of spring time with such a fresh taste.”
3. Fresh Infusions
If a more traditional flavor appeals to you, brides can always liven up with flavor by pairing richer cakes with a lighter, fresher filling or icing. Or, choose a unique flavor that represents Spring while still boasting that rich flavor.
“Our buttery almond cake is another nice spring flavor. That can be paired with lemon flavors. We do a lot of fruits, including a banana walnut cake, which is really good. We serve that with our cream cheese frosting. But whatever flavor you choose, it is all about adding that freshness for spring.”
When it comes to the appearance, Spring provides the perfect backdrop for a beautiful cake.
“Once you get passed the traditional look, you want to see that whimsical look with the pastels and pinks with small flowers. Whimsical looks are great for spring as they seem so bright.”
